How to make a raw, vegan and gluten-free dessert! When I first started experimenting with raw food, I had no idea where to start. I researched and gradually learned a great amount of information about raw food and still love to experiment with raw food recipes. Especially during summer time! As you know, my practice is all about balance, so I try and include at least 2-3 raw food recipes in my diet once a week. This week, I really wanted to try a raw food dessert recipe, and so I made this beautiful little pie or tart (whichever you prefer). To me, it kind of tasted like a birthday cake. Really! It’s so good and easy to make, you will want to make it again and again. It is healthy indeed, but because of the dry fruits, there is some fat content for sure. But as I said, balance is the key. You can eat anything in moderation and enjoy it.

  1. Crust - In a food processor, combine 5 dates, pistachios, almond meal flour, agave nectar and cinnamon (optional), then blend and set aside.
  2. Frosting - In a vitamix blender, combine blueberries, cashews, vanilla extract, almond milk and 2 dates then blend to a thick yogurt like consistency. Set aside.
  3. Place a round food mold on a plate and fill it with the crust mixture, then press nicely with a spoon till set.
  4. Remove the mold carefully and add frosting to the crust with a spoon in circular motion.
  5. Apple flower - Cut an apple I half and slice one half into thin slices.
  6. Place the slices in hot water for 10 to 15 minutes, then wash with cold water.
  7. Lay the slices one on top of other (see video), then fold into a flower and place on the tart as garnish.
  8. Serve fresh!
