I love the fact that you could get so creative with something as simple as a sweet potato! It’s loaded with nutrients and is considered a superfood for that very reason. Last week, I decided to create a gourmet recipe with this superfood, which I am so glad I did. This recipe is super simple to make with very few ingredients, and it is full of delicious flavors and textures. I had so much fun during the entire process of creating this recipe, and when finished, it looked too pretty to eat. These sweet potato boats are colorful and delicious. They are gluten-free and guilt-free so you can go for seconds!! Try making it for lunch or dinner as one of your weeknight meals. Print this recipe below.

Sweet Potato Boats

Instructions
  1. Pre-heat oven at 400 degrees
  2. Wash and dry sweet potatoes, them prick with fork
  3. Brush each sweet potato with olive oil then place in the oven to bake for 40 minutes till done
  4. Heat a skillet on medium and toast pine nuts and black sesame seeds separately, then set aside
  5. In the same skillet, add about 1 tsp of olive oil and saute kale leaves with salt & black pepper then set aside
  6. Take the potatoes out of the oven after 40 minutes or when done then cut carefully in halves. (Use tongs as they are very HOT) See Video
  7. Scrape each sweet potato lightly with a fork as shown in the video
  8. Now start layering the halves with cooked kale, roasted corn, toasted pine nuts, toasted black sesame seeds, fresh pesto & finally fresh goat cheese
  9. Serve & enjoy!
