These are perfect for a post-workout snack or just to enjoy a healthy treat with a cup of coffee. Also a great source of protein and very quick to bake.
Ingredients
1 cup crunchy almond butter
1 large egg (beaten)
3-4 tbsp maple syrup
1 cup shredded coconut or coconut flour
1/2 tsp vanilla extract
8-10 pecans (I used candied pecans for more flavor)
Method
Preheat oven to 350
Line a cookie baking pan with parchment paper
Mix all the ingredients in a bowl to a thick batter consistency
Use an ice cream scoop to place the cookie dough into small balls on the baking tray
Flatten and shape the cookies with your fingers or a flat spatula
Place in the oven and bake for 10-15 or a few more minutes until golden brown
