Fried Rice scramble


Ok, so you have heard of cauliflower rice, but how about making rice with actual rice & adding something super healthy in it to make it more nutritious! This recipe is made with just a few simple ingredients and yet tastes so so good.

Over the years, I have learned that a lot of people struggle with eating healthy because they don’t know where to start or, how to include veggies in their meals. Well this recipe is a

No-brainer when it comes so eating something that tastes good & it is loaded with veggies.

In my version of this fried rice recipe, I added a smaller quantity of rice and larger quantities of veggies as well as some good amount of protein and fat. This recipe is a perfect combination of good carbs, protein & healthy fats. A well balanced meal on the plate!

You also get lots of fiber & nutrients without giving up the rice, which a lot of people miss by eating just cauliflower rice & avoid eating veggies altogether as a result.

Here’s the recipe & what you’ll need


A whole head of broccoli

Cut it into bite size pieces & pulse the broccoli in the food processor



1 cup cooked brown rice



1 TSP garlic powder


2 cups mixed veggies of choice


1 TBSP olive oil



Heat a pan on high, add olive oil & mixed veggies


Add broccoli



Sauté for 2-3 mins



Add garlic powder



Add chilli powder for some heat (Optional)



Add salt to taste then mix it all and sauté for a minute



Add rice (I added brown rice here)
After Adding rice, mix it all well and sauté for 2-3 minutes



Now turn the heat to low and push the rice to one side of pan. Add a tsp of olive oil on the other side & crack an egg.

Scramble the egg, then mix in with rice & veggies



Turn off the heat & add in 1 tsp of coconut aminos then mix well



Serve & enjoy!
