This five ingredients nutrition rich recipe is perfect for the winters. Inspired by the “panjiri“ recipe my mom and grandma use to make during the winters, which usually consisted of whole wheat flour, nuts, seeds, ghee & much more. Panjiri is made in winters because it keeps the cold/flu away and is full of energy because of it’s nutrient dense ingredient. It also benefits nursing mothers for lactation purpose.
My winter mix recipe does not contain any wheat, sugar or nuts. It’s gluten-free and rich in omega-3, which promotes good gut and heart health. I recommend including just a heaping tablespoon in your daily diet to get it’s benefits. This mix will boost your energy levels and satisfy your sweet tooth at the same time.
Here’s the Recipe/ingredients.
Shredded coconut - 1-1/2 cup
Dates - 10-12
Cardamom seeds - half a tsp
Pumpkin seeds - 1 tbsp
Flax meal - 1-1/2 cup
Place all ingredients in a food processor
After processing the ingredient, it should look as shown above
Heat a nonstick pan and add some ghee then transfer the mixture from the food processor to the pan and sauté for 5-7 mins on medium to low heat until golden brown. You can tell by the toasty aroma that it is well done.
Let it cool and the store in a glass container at room temperature.
Heat lightly before serving whenever you want your daily serving.
